Chicken Katsu - Using Gardein


Maui is my favorite place in the entire world.  In fact, I have passed up the opportunity to travel to new places in order to continue visiting Maui.  I have gone so frequently, it is almost like a second home.  I know my way around the island about as well as I know my way around my home town.  A common meal in Hawaii is called a Plate Lunch.  It consists of a meat dish (usually terriyaki chicken, chicken katsu, mahi mahi, or breaded terriyaki beef, among others), hawaiian-style macaroni salad, and two scoops of rice.  


With a toddler and a baby, I am not venturing on a 5 hour flight any time soon, so I decided to bring the islands to me!  This meal is very simple and so tasty!  My husband says this is among the best chicken katsu recipes he has had - even though it uses Gardein vegetarian chicken!  Don't worry, this recipe can easily be applied to real chicken for you meat eaters.  :)  Want a mini-vacay?  This meal will make you feel like you are dining in Maui!  Aloha!


Ingredients
4 Gardein chicken scallopini fillets, thawed
3/4 C flour 
2 eggs, lightly beaten
1-2 C panko flakes
1/4 - 1/2 C olive oil


Directions

  1. Heat olive oil in a large frying pan over medium-high heat.
  2. Line up 3 shallow bowls.  Fill one with the flour, one with the eggs, and one with the panko.
  3. Dredge a fillet in flour, coat in egg, and dredge in panko.
  4. Place into the heated oil.  Fry until golden brown.  Flip and cook other side.  Repeat with all fillets.
  5. Serve warm with Katsu sauce.

  3. Fantastic!! There are times that I don't like my husband because he lived in Hawaii for three years before we met. *Sigh*...then we meet and he gets stationed in Kansas! ha ha. I'll have to make this for him, thank you for sharing!
